Sweet potato superfood salad

This sweet potato superfood salad combines both techniques and becomes wonderfully flavourful – with crunchy chickpeas, tender sweet potatoes, fresh vegetables and a light dressing.

Ingredients

Preparation time: 30 minutes

Baking time: 30 minutes

Serves: 3–4 people

Sweet potatoes

  • 500 g sweet potatoes
  • 2 tbsp oil
  • 1 tbsp dried herbs
  • 1 tsp paprika
  • 3/4 tsp salt, pepper

Chickpeas

  • 1 can chickpeas (250 g)
  • 1 tbsp oil
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1/2 tsp salt, pepper

Vegetables

  • 1 broccoli (approx. 350 g)
  • 1 bell pepper
  • 1 tbsp oil
  • Salt, pepper

Salad base

  • Mixed baby greens
  • Kale

Dressing

  • 2 tbsp apple cider vinegar
  • 3 tbsp rapeseed oil
  • 1/2 tsp chia seeds
  • 1/2 tsp garlic powder
  • 1/2 tsp mustard
  • 1 tsp honey
  • Salt, pepper

Prepare sweet potatoes

Preparation

Wash the sweet potatoes and cut them into slices of about 1–1.5 cm. Toss them in a bowl with the oil and spices.

Line the steamer tray or baking tray with baking paper and spread the sweet potatoes on top.

Steam or bake depending on the appliance used.

Preparation

Bake in Airfry mode at 220 °C for 15 minutes. Remove from the steamer and gently press down with the bottom of a glass.

Drain the chickpeas and season them. Add them to the steamer together with the sweet potatoes and bake for another 15 minutes in Airfry mode until crispy.

Remove from the steamer and let cool.

Wash and cut the broccoli and bell pepper. Season with oil and spices. Place in the perforated tray, slide the solid tray underneath and steam in Steam mode at 100 °C for 15 minutes.

For the dressing

Combine all ingredients in a container and shake well.

Arrange the salad on plates and distribute all ingredients on top.

Drizzle with the dressing and enjoy.
