Basic recipe: perfect deviled eggs

Ingredients

  • 6 eggs (size M)
  • 3–4 tbsp mayonnaise or crème fraîche
  • 1–2 tsp mustard (Dijon or medium-hot)
  • Salt, pepper
  • 1 tsp lemon juice or white wine vinegar

Preparation

  1. Boil the eggs: Set the Trisa «Vario Eggs» egg cooker to «hard». Alternatively: boil for 10 minutes, then rinse with cold water.
  2. Prepare: Cut the eggs lengthwise and carefully remove the yolks.
  3. Make the filling: Mix the yolks with mayonnaise, mustard, salt, pepper and lemon juice until smooth. With the Trisa «Dynamic Blade 1500» hand blender, the mixture becomes especially silky.
  4. Fill: Transfer the cream into a piping bag with a star nozzle and pipe decoratively.
  5. Chill: Store in the refrigerator until ready to serve.

«Egg white» base

  • 8 small waxy potatoes

Vegan filling

  • 150 g firm natural tofu
  • 3 tbsp vegan mayonnaise
  • 1 tsp mustard
  • ¼ tsp kala namak
  • ¼ tsp turmeric
  • 1 tbsp finely chopped chives
  • Salt, pepper

Preparation

  1. Cook the potatoes in their skins until tender and allow them to cool completely.
  2. Cut in half lengthwise and carefully scoop out a small cavity.
  3. Blend the tofu with the scooped-out potato, vegan mayo, mustard and spices in the Trisa Nutri Blender «Energy Boost» until smooth.
  4. Pipe the filling into the potato halves and sprinkle with paprika.
